Yesterday I experimented with another simple gluten-free, dairy free, egg free Paleo raw dessert and it was soooo yummy I am definitely making more!

Vegan Cookie Dough Brownie

What you will need is:

Bottom layer (Brownie):

  • 60g ground almonds
  • 40g pecans
  • 4 Tablespoons of cacao powder
  • 10 pitted dates
  • ½ Teaspoon vanilla extract
  • 2 Table spoons coconut oil, melted

Top layer (Cookie Dough):

  • 6 Tablespoons coconut oil, melted
  • 140 grams ground almonds
  • 3 tablespoons coconut milk (or other type of milk if you wish)
  • 1 Tablespoon vanilla extract
  • 1 table spoon rice maple syrup
  • & the best part – Some chocolate chip 🙂

Instructions:

Brownie

  1. Using the food processor grind the pecans and place in a bowl
  2. With a splash of water process the dates until is nice and creamy and add to the pecan bowl
  3. Add the rest of the brownie ingredients and using your hands mix until all combined
  4. Place some parchment paper in a baking dish and spread the mixture evenly

 Cookie Dough

  1. In a bowl whish the coconut oil, milk, vanilla and honey
  2. Add almond flour until all nicely combined
  3. Add the chocolate chips and mix gently with a spoon
  4. Spread the cookie dough on top of the brownie mixture in the tin
  5. Freeze for ½ or refrigerate for an hour until the dough is firm
