Omg I can’t believe it’s been a month since I last posted! A week off turned into a month off 🙁
But anyways I am back now & I am posting my first ever savoury meal! I’ve been posting so many treats and desserts, which was FUN to experiment with & share but some of us (including me!) need and/or want to limit our sugary treats & watch that sweet tooth! lol
Anyhow this recipe is super simple & easy to make! Its vegan, gluten free, high in protein! Super low in calories & of course satisfying and delicious 🙂
For serving of 2 people, you will need:
- 200g cooked quinoa (this is your vegan protein source which will also keep you full)
- 300g yellow pepper (any will do!)
- 100g Sauerkraut – another protein source which will also keep you tummy happy J
- Spinach, cucumber & tomatoes for your salad (any desired amount)
- Spices (I used curry and chilli powder, Himalayan pink salt and some pepper)
What you need to do:
- Wash and boil your quinoa for 15mins or until cooked
- Slice you peppers and cook for few minutes in a pan
- Add the quinoa to the peppers , add your spices & mix well
- Set aside and make you green salad, but cutting you cucumber & tomatoes
- Rinse you spinach and place in a plate, add you cucumber, tomatoes & some Sauerkraut
- Add your cooked quinoa to your plate & Enjoy!

Anyways thought I would share some nutritional facts about the ingredients I used here:
- Sauerkraut is one of the healthiest, probiotic-rich, fermented foods around. Sauerkraut contains high levels of dietary fiber, as well as significant levels of vitamin A, vitamin C, vitamin K, and various B vitamins. Furthermore, it is a good source of iron, manganese, copper, sodium, magnesium, and calcium, in addition to contributing a moderate amount of protein to your diet. If you suffer from digestive issues, have a sensitive gut or just simply want to balance you gut bacteria and have a happy gut flora this should be in your fridge 😉
- Quinoa is naturally gluten-free and one of the few plant foods that contain all nine essential amino acids. It contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber. It is one of only a few plant foods that are considered a complete protein and comprised of all nine essential amino acids.
